Crock Pot Chicken Curry

I admit that this recipe is not the healthiest...  If you're new around here I really do seek to prepare real food with minimal processed ingredients.  This doesn't necessarily fall into that category.  But it tastes good and it's easy.  If you're struggling to get a meal together so that your family can sit down at the table together for dinner this is good option.







Ingredients
  • 3 chicken breasts (cooked and shredded)
  • 2 cans Cream of Chicken Soup (this being the processed ingredient) 
  • 1/2 cup dry sherry 
  • 4 Tbs butter
  • 2 tsp curry powder
  • 1/2-1 tsp salt (I stay on the lower end because the Cream of Chicken is pretty salty on its own)
  • 1 tsp pepper
  • Brown Rice

Directions
  • Combine first 7 ingredients in crock pot.  Cook on low for 2-4 hours
  • Serve over brown rice with a salad to make sure you get in those veggies :)
